A classic style of fizz with finesse and elegance. The nose has baked apple with a light yeastiness developing, some red fruit character and background hints of honey and caramel. Baked apples carry through the palate on a core of Pinot fruit flavour. This wine also shows an attractive sourdough complexity from extended yeast autolysis. 12.5% abv
