This year, we’ve once again been working with our esteemed colleagues at Domaine Gayda in the South of France to create not one, but two beautifully rich red wines. A combination of traditional yet diverse terroirs throughout the Languedoc, combined with innovative winemaking methods adds uniqueness and character to each wine.

Specifically selected for its depth of flavour, this Syrah incudes fruit sourced from Rousillon & Minervois-la-Livinière. Aromas of red berries and black pepper spice on the nose. The palate is rich with subtle oak character and fine tannins leading to the long finish.

A combination of traditional yet diverse terroirs throughout the Languedoc, combined with innovative winemaking methods adds uniqueness and character to each wine.

Winemaking

The winemaking process encompasses some very traditional elements. The wine has gone through a cold soak at 10°C for 5 days and indigenous fermentation took place at around 24-26°C. Post fermentation maceration took place for 2 weeks and the wine totaled approx. One month on the skins.

Viticulture

Domaine Gayda is a fully organic vineyard, situated in the foothills of the Pyrenees. Grapes are grown on the many diverse soils and climates of their vineyards located throughout Roussillon and Minervois.
