No'7 La Livinière 2019 By Domaine Gayda
6 Bottle Case
Remarkable wines from like-minded producers around the world, curated for you by Chapel Down’s head winemaker, Josh Donaghay-Spire.
This year, we’ve once again been working with our esteemed colleagues at Domaine Gayda in the South of France to create not one, but two beautifully rich red wines. A combination of traditional yet diverse terroirs throughout the Languedoc, combined with innovative winemaking methods adds uniqueness and character to each wine.
The combination of altitude with the limestone and schist terroir of La Livinière gives rise to fruit of exceptional balance. Concentrated aromas of dark fruit compote and vanilla spice on the nose. The palate is intense with flavours of dark chocolate and well-integrated oak. The smooth elegant tannins lead to the rich, indulgent finish.

A combination of traditional yet diverse terroirs throughout the Languedoc, combined with innovative winemaking methods adds uniqueness and character to each wine.
The winemaking process encompasses some very traditional elements. The wine has gone through a cold soak at 10°C for 5 days and indigenous fermentation took place at around 24-26°C. Post fermentation maceration took place for 2 weeks and the wine totaled approx. One month on the skins.
