Grape Variety
Chardonnay is one of the classic grape varieties for sparkling wine production, for this reason it should come as no surprise that in the UK, where sparkling wine dominates production, Chardonnay is the most widely planted grape variety. While Sparkling is the headliner, Chapel Down has been producing still Chardonnay since 2009. Our home is roughly 280 miles from Chablis as the crow flies and with our sites and clones only getting better, our still Chardonnay's are complex, vibrant and shine a light on this once side-lined grape.
Vineyard
Within Kent, the North Downs is gaining particular acclaim for the sparkling wine produced on its soils. Shaped by the same free-draining chalk formations found 200 miles to the south-east in the Champagne region of France, the Kent North Downs provide ideal terroir to create the consistently high quality fruit required to make award winning sparkling wine.
Winemaking
Whilst almost all red wines use malolactic fermentation to create smoother end products. At Chapel Down, we utilise the same process of converting tart malic acid into softer lactic acid for a variety of our white wines. This allows for additional velvety texture and body to be added to these wines, without overpowering signature floral or citrus aromas.
